This Ginger and Lemon Syrup is one of those quick and easy recipes that one usually has all the ingredients required at home.
I used to make the syrup all summer because there is nothing better on a hot day! We add it to sparkling water and it makes the easiest lemonade that impresses every guest. I never came around to take photos for the blog though. After our holiday it got way to cold for lemonade recipes…. BUT !!! Then came the day when I was in a real need for my favourite drink: Gin Fizz! Can you see where this is going? Yeah! Ginger and Lemon Gin Fizz !! Just add some Syrup to a long drink glass with ice, some soda and Gin and be prepared for probably THE best long drink.
Of course you can also add it to boiling water if that annoying cold is creeping around the corner! The syrup also makes a nice small gift when visiting friends or family, especially now, that Christmas is just around the corner!
MAKES ABOUT 800 ML
ABOUT 20 MINUTES + 1 HOUR FOR COOLING
120 gr peeled ginger
360 ml lemon juice (about 12 lemons or one bottle of lemon juice :-))
230 gr sugar
Peel the ginger by using a spoon and grate it. Put the ginger, lemon juice, sugar and 400 ml of water into a pot and bring to boil while stirring occasionally. Once the mixture boils, turn down the heat and let it simmer for 10 minutes. After letting it cool down for about an hour you can pour it through a sieve and fill it into a clean glass bottle.
You can keep it in the fridge for at least a month.
