Gula Apong – Palmsugar Chicken

We arrived back from South-East Asia a couple of weeks ago and everything is back to normal. Meaning we are working all the time and it really is getting winter here in Germany. Even though I am still working on the article about Malaysia and Brunei, I like to show you an easy peasy Malaysian Palmsugar chicken recipe that brings you into traveling mode right away!

As we were strolling through Kuching in Borneo I stopped to take a photo of a wall full of plants. Looking closer I saw an advertisement for a cooking class right around the corner. 2 Minutes later we were on our way to the local market with Trudy, the cafés owner. We had an amazing time cooking Malaysian treats and learning more about the culture of Sarawak. Also Fred kind of learned how to open a fresh coconut.Not sure I want to rely on that ability if we were ever lost on an island though…

Here comes the Palmsugar chicken (Gula Among)

If you cannot find any creamy palm sugar, you might get it as chunks that need to be dissolved before you can use it. Same goes for tamarind paste. If yours is too chunky, you can add some hot water and only use the sauce that develops. 

SERVES 4

ABOUT 50 MINUTES

Ingredients

2 chicken breast, cut into cubes

4 tablespoons gula apong (palm sugar)

2 teaspoons turmeric powder

4 teaspoons tamarind paste

1/2 teaspoon salt

6 tablespoons oil

6 cm piece of ginger

2 stalks lemongrass

4 shallots

4 cloves garlic

1 tablespoon coriander seeds

2 tablespoons cumin

Preperation

Pound the ginger, lemongrass, shallots, garlic. If you don’t have a pounder you can chop it up finely. Separately pound the coriander and coriander seeds roughly.

Marinade the chicken with palm sugar, turmeric powder, ginger, shallot, garlic and tamarind paste. Set aside for at least 5 minutes.

Heat the oil and stir fry the coriander seeds, cumin and lemongrass until your whole kitchen smells like holiday :-). Add chicken and stir well. Add 150 ml of water, cover it and let it simmer until the gravy thickens.

Serve with rice. Enjoy !!
